I love having roasted vegetables sitting in the fridge because I can reinvent them in different ways… colorful vegetables tossed with some pasta, into a soup, in a sandwich or today… into a wrap. This is a quick easy lunch that’s chockfull of gorgeously colored vegetables and whole grain. I like using the whole-wheat lavash bread for my rolls and wraps because it holds up well to any kind of filling and fills me up well. You could any kind of flat bread you wish or have at hand… after all its about convenience too. There are no exact measurements for this recipe as it can be one of those fridge magnet recipes too!

Quick Roasted Vegetable Roll
What you need:
Roasted Vegetables
Hummus (I used Cilantro JalapeƱo Hummus) – Enough to spread over the lavash bread
Crumbled Feta Cheese (optional), to taste
1 Whole-Wheat Lavash Bread
Tzatziki – to serve
Getting down to business:
Spread the hummus on the lavash bread and spread the sliced roasted vegetables onto one half of the lavash bread. Sprinkle on some feta if using. Then tightly roll the bread into a roll. Slice into half. Serve with a dollop of tzatziki.
Notes:
This travels very well for a summer picnic or a packed lunch.
Tzatziki is Greek yoghurt flavored with cucumbers and garlic. If you don’t have Tzatziki, that’s fine… just use sour cream.
